Ingredients
Dry Dredge
- 3 boneless skinless chicken thighs
- 1/2 cup flour
- 1/2 corn scratch
- 1 tsp Korean chili flake
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp ginger powder
- 1 tsp salt
Wet Brine
- 2 cups butter milk
- 1 tbsp salt
- (Same spices as in dry ingredients)
Slaw
- 1 cup red cabbage
- 1/2 cup cabbage
- 1 carrot shredded
- 3 green onions
- 1/4 cup kimchi diced
- 1/4 cup kewpie mayo
- 1 tbsps rice or apple cider vinegar
- 1 tbsp kimchi juice
- Black pepper and salt to taste
- 1 tsp toasted sesame oil
Spiced Oil
- 1/4 cup neutral oil
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 2 tsp Korean chili flakes
- 1/2 tsp onion powder
- 2 garlic cloves crushed
- 1/4 black pepper
Extras
- Mayo
- Dill pickles
- Burger Buns (Brioche preferably)
Directions
- In a bowl combine everything listed for the brine then add chicken and set a side to marinate for at least an hour.
- In a big bowl all your mayo, vinegar, spices, and kimchi juice then cut all your vegetables and add to the bowl (place in the fridge until ready to use).
- Prep the dry dredge then add two tbsp of it to the wet brine of the chicken and combine.
- Place one chicken in the dry dredge making sure to squeeze the flour into any wet parts of the chicken. Repeat with reminding chicken and let rest for 1o mins.
- During this time heat enough oil to deep fry chicken to 350.
- Fry chicken until golden brown and has reached an internal temp of 165.
