Chicken Pho
Pho is a dish with a complex flavor that normally takes a long time, but with my recipe, you will get the same flavorful dish in a significantly shorter time.
Ingredients
Broth
- 2 Big chicken quarter
- 1 Large onion or 2 medium onions
- 1 Cinnamon stick
- 2 tsp Fennel seeds
- 2 tsp Coriander seeds
- 1 Ginger cluster
- 4 Cloves
- 1 Black cardamom
- 1/2 tbsp Salt
- 1/4 cup Fish sauce
- 12 cups Water 💦
- Pho noodles preferably fresh
Garnishes
- Limes
- Thai basil or Italy basil
- Cilantro
- Thinly sliced onions 🧅
- Spring onion
- A bunch of bean sprouts

Instructions
🍲 Cut onion and ginger in half and roast until slightly charred
🍲 In a soup pot add chicken, salt, and water then add onion and ginger and put on high heat
🍲 Combine spices in a dry pan and toast until fragrant then place a tea bag and add to pot
🍲 Bring to a boil, then put on medium low heat and fish sauce
🍲 While the pot is on fire prepare your garnishes
🍲 Cook noodles to accordingly package instructions and place in serving bowls
🍲 After chicken is done take out and let cool. Taste and adjust broth’s seasoning by adding more salt or fish sauce. Keep on heat until ready to serve
🍲 Once chicken is cooled shred and set aside
🍲 In serving bowls add chicken and hot broth, then add garnishments and enjoy

Pro Tip
- Remove any scum from your broth by using a small mesh strainer. Place a bowl of water nearby and skim the scum with the strainer, then submerge the strainer in the water to easily discard it.
- Do not be afraid to put a good char on your onions and ginger. Along as it does not smell burnt, adding more char gives you more flavor.
- Taste the broth throughout its cooking. This way you will have a better idea of how much fish sauce and salt you want.
