Ingredients

  • 1/2 packed light brown sugar
  • 1 1/2 cup flour
  • 1/4 white sugar
  • 1/2 teaspoons baking soda
  • 1/2 salt
  • 1/2 cup melted brown butter
  • 1 egg
  • A pinch or 2 of espresso
  • Semi sweet Chocolate chips (I never measure this just add until you are content)
  • 2 tsp vanilla extract

Directions

🍪 Put butter in a saucepan on medium heat and cook till brown and has a nutty cookie aroma.

🍪 Carefully transfer brown butter into a heat proof bowl and store in the freezer until slightly chilled and ready to use (this won't take long) if your butter is not 1/2 cup after cooking it, just add more cold butter this will also help it cool down).

🍪 A small bowl put flour, salt, baking soda, mix and set aside until ready to use. In a bigger bowl mix sugars, salt, espresso, butter, then egg (make sure the butter is not hot enough to cook the egg) and MIX.

🍪 Then add flour mixture and mix to combine. Add chocolate chips and optional walnuts (honestly I eyeball it).

🍪 Scoop out a little less than 1/4 cup of cookie dough, roll them out on a parchment line baking sheet (it should make about 8 cookies).

🍪 Once all the cookies are rolled put them in the freezer for 30 mins.

🍪 This is the SECRET: Bake at 375 for 5-7 mins and turn OFF the oven and leave the cookies in (it should still be gooey in the center, but a little firm but not yet browned.) Leave the cookies in and check on it in 5 mins ish until center is to liking.

🍪 It is ready when it's more firm and browned but still a little gooey in the center. You could let them chill in the freezer for like 3 mins and then enjoy or you could somehow try to not burn you tongue and eat it straight out of the oven. Either way the enjoy your cookies.

Why you'll love this recipe

Who doesn't love chocolate chip cookies? Plus this recipe is easy. I do this the night before I got to work and have delicious cookies the next day for lunch. Also, saving the rest in the fridge and baking them whenever I want feels great.

Bonus: It develops a better flavor the longer it stays in the fridge.

Tips and Tricks

  • I know you don't want to put the cookies in the freezer, but trust and believe it will taste better and have a better texture. You can also store cookie dough in the fridge and bake later.
  • DO THIS! Take the cookies out of the oven while its baking and bang it on the counter a couple times. This gives the cookie a great texture by eliminating the air in the cookies, giving you chewy cookies with a crackly top.
