Birria Empanadas

Many already know and love birria tacos and empanadas. Now, I have combined the beauty of both in a flavorful masterpiece called birria empanadas. This recipe takes the succulent, flavorful beef of birria and places it in the warm, crispy, fried dough of an empanada, creating a familiar yet newly addicting taste.

Ingredients

  • Sey’s Birria recipe
  • 1 onion medium
  • Half bunch cilantro
  • A block of your choice of cheese (I used sharp cheddar)
  • Frozen 5in empanadas wraps
  • Neutral oil (enough to deep fry)

Directions

🥟 Defrost your empanada wraps (you can just separate and lay them out on a flat surface until they are thawed)


🥟 Dice onion and cilantro and set aside


🥟 Cut up your block of cheese into 2in by 1/2in rectangles (depending on the size of your dough)


🥟 Get your empanada wrap and put the cheese slightly off center, but not too close to the edge. Place your beef (about a tsp or two) with not too much liquid. Then put your chopped cilantro and onion mixture on top (also about a tsp).


🥟 Gently fold over the empanada and pinch close. If it’s not closing after you pinch it, there might too much liquid on the edges to close. Get a paper towel and dab it dry and try again.


🥟 Once it is pinched closed get a fork and create a fork imprint around the edges. This will make it not only look nice but it will make it have a tighter seal.


🥟 Heat up the oil. A trick is to stick a wooden utensil like a chopstick or a ladle and see if bubbles are forming around it. If it is the oil is hot enough. Put your empanadas in, making sure there’s not too many in the pan.


🥟 Fry until golden, brown, and beautiful. Dip it into some of the Birria consumé, then enjoy.
